Chicken and Taco Salad


Not a lot to write about- just church, church, church. Think we'll have communion Wednesday night! Was hoping it would be Tuesday but guess some thought we needed 2 more council meetings instead of one long one... So we'll be happy and accept that! :) 

We had the ministers over for lunch today. Here's the salad I made for them:

2 chicken breasts, cubed                      ½ cup miracle whip
1 Tbs oil                                                        3 cups chips (Doritos/ Tortilla)
½ cup salsa                                                3 cups shredded lettuce
1 avocado, mashed                                  1 can black beans
¼ - ½  tsp hot pepper sauce                  shredded cheese
½ cup chopped tomato

Stir-fry chicken in oil, reduce heat, add salsa, simmer for 5 minutes. For dressing: stir together salad dressing, avocado, and pepper sauce. Layer and enjoy!

My changes:
·       I marinated the chicken in a southwest marinade and baked in the oven then simmered in salsa just before serving…
·       I added lime juice to the dressing…
·       The black beans I simmered in the seasonings used for the Sonora Sunset Chicken salad…
·       Sliced avocados are a great addition to the salad as well!
