It Snowed Today, So.... Ya!

Tickets
I am SO Excited!! We booked our tickets yesterday! Now we can for sure say that we are going to pick up Erica in Gallop, and we are going to be at Gwen and Morgan's wedding, and we are going to spend a little bit of time in Alabama!! I absolutely can not wait!! I'm just hoping for hot, sunny weather!One thing I am very disappointed about though is missing Melissa's wedding! But maybe we'll still be able to see them at Gwen's!
We still have lots of snow here! But it's slowly starting to melt, so now the talk is... Flood! Which is a real pain cause that means 45 min. to work instead of the normal 8! Maybe we can move in with someone!
Work is still good. Just seems like we don't have a lot of social life anymore. But that's ok for a few months. And besides it gives us time to go to the gym without having any excuses!!
A little saying for today....

Sunday's Thought
An interesting thought…

is what Dad-in-Law asked at our little church service in Kenora on Sunday.
There were different answers but most of them had to do with paying off debt
and investing it. No one said anything about buying a Thank You card and
sending it too Mr. Gates. So then, why the question? Dad said if we did the
numbers there are 86,400 seconds in a day that God has given us, and our only
requirements is to use that time wisely. How do we use it? And most of all do
we thank Him for this time? I thought it was a very interesting ‘message’.
Something
that’s not very interesting… We’re having a blizzard! I don’t ever remember
being so tired of Winter as I am right now!!

Big News!
.... it's snowing! So really it's not big news at all. Just normal for here, you know, nothing new! The other night at Fire Meeting the Chief was saying that the Day Care in town wanted us to come do a fire drill with them. Chief said we'd do that soon as it warmed up, which would most likely be next year. So it's not even just me, a southern girl, that is getting very, very tired of winter! So ya, we're trying not to lose heart and have faith that spring or summer or hopefully both will arrive to this cold, northern land!

Scrummy Supper
Hello again! I've been wanting to tell ya'll about a recipe a tried from Pinterest. It's called Shrimp Pad Thai and it was definitely a hit! Go Pinterst Go! I just love looking on there for recipes (and lots of other things too) lol. Can't wait for spring to come so I can try some of my many ideas!! By the way, I was going to try and make at least one quilt but that hasn't happened! At least I try my recipes, right?! So now... For the wonderful -
Shrimp Pad Thai
1/4 cup rice vinegar
3 tablespoon fish sauce (don't smell it, just dump it in!)
1 tablespoon soy sauce
2 teaspoons ketchup (weird, right?)
2 teaspoons worchestershire
1 teaspoon sesame oil
2 tablespoons brown sugar
1/4 teaspoon red pepper flakes (if you like just a little spice)
1/3 lb. home-style wide noodles (can use uncooked if you prefer, and just cook a little longer)
1 red bell pepper, sliced thin
1/4 lb. brussel sprouts, sliced thin
1/4 cup chopped dry roasted peanuts
1/4 cup chopped cilantro
1/2 lime for serving

Stir
together the first eight ingredients. Set aside. Cook noodles. You might want
them a tiny bit under cooked. Next stir fry bell pepper in a bit of oil until
softened. Now stir in shrimp and sliced brussel sprouts and cook until the
sprouts and bright green, 2-3 minutes over medium heat. Add noodles and pour on
sauce, cook an additional 5-6 minutes until the sauce has somewhat
evaporated/cooked into the other ingredients. In the last minute of cooking,
stir in the peanuts and cilantro. Or just top the cilantro, however you like!
And actually, I like the peanuts a little softer so think I’d add them in
earlier next time!
So enjoy if you make it! And if you don't make it, I'll just feel sorry for you and enjoy it myself with my dear man who ate half of it himself! Love that man!!!

Easter Weekend
So how was everyone's Easter weekend? We had a great time. Friday was a holiday so slept in!! That was one of the best things of the whole wkend. Then in the evening we served "Uncle" Bill's 60th anniversary supper. Was a pile of people and us and another girl from here were the only ones serving. It seems like it went by in quite a whirl! But we made it and it even turned out! Then we raced off to Kenora.
Saturday slept in some but dear little Antonio Joshua Moralas woke us up before it could get too late. He's Josh and Christi's little guy and is he ever cute!! He's running around and talking non-stop! Spent the day sewing and goofing off around the house. Had some very good smoked pork for supper!
Sunday we went to church (at the town hall). There was a quartet from Kleefield there who sang to us after the service. Was so awesome to hear some really good singing again. We always have a potluck there for lunch so had a yummy meal of lasagna, salad, garlic bread, and fruit salad. Then some cream cheese dessert to top it off!! Back at folks Christi and I did puzzle and the rest took naps. Then Kelly and I loaded up and headed back for good ol' Mo-Town.
Now it's been back to work. Other than I had Tuesday off. I told them I had to stay home and do laundry and clean my house or I'd soon have to take 2-3 days off! It was awful! But now it's livable again! :)
